Rich, spicy and creamy tortellini soup. Perfect for a cold day. Makes excellent leftovers and is PERFECT with crusty bread.

  • 1 lb Hot Italian Sausage
  • 1 medium yellow onion, diced
  • 2 large carrots, diced
  • 4 cloved garlic, minced
  • 5 c. chicken broth
  • 14-16 oz. frozen cheese tortellini, cooked according to directions
  • 1 t. salt
  • 1/2 t. ground pepper
  • 6 oz fresh spinach roughly chopped
  • 2 c. half and half or heavy cream
  • 1/2 c. EZ Gel


Step 1
Over medium heat, brown sausage in a large saucepan. Using a slotted spoon, transfer cooked sausage to a paper towel lined plate or bowl. Set aside

Step 2
Add onion, carrot and garlic to drippings in sauce pan and saute for 5-7 minutes or until fragrant. Stirring occasionally to keep from scorching. 

Step 3
Add in chicken broth and bring to a simmer. Once carrots are tender, slowly sprinkle in EZ Gel and mix with a whisk. Stir well until fully incorporated. 

Step 4
Add in sausage, cooked tortellini, roughly chopped spinach and half and half. Stir well. If more thickening is desired, add more EZ Gel, 1 TBSP at a time using a whisk. Allow to sit for 1-3 minutes between additions.

Serve HOT with crusty bread.
