With seven hungry kids home for Christmas break, making a big breakfast every morning was a must! Thick, fluffy Belgian waffles hot off the waffle iron are a favorite in our home. Cornaby’s has some AMAZINGLY delicious toppings, syrups, fruit fillings, and spreadable fruits that are perfect for a beautiful and yummy waffle bar. In addition to those bottled toppings, I like to have some fresh fruit toppings as well.

If you want a fresh fruit jam in less than 5 minutes, Cornaby’s Jam in a Jiffy is a delicious solution! You need 4 cups (or 2lbs) of fruit for one package of Jam in a Jiffy. I had about 3 cups of strawberries and 1 cup of raspberries in the fridge that needed to be used up so I made a mixed berry jam. That’s the awesome thing about Jam in a Jiffy, you can use any combination of fruit! Pineapple chunks, fresh apricots, mangos, or peaches would also be some tasty options.

Chop, crush, or pulse your fruit in a blender, depending on your preference of chunkiness for your jam. Add a little water (half a cup for the regular mix and 1.5 cups for the sugar free mix) along with the pouch of Jam in a Jiffy and stir for about a minute. Let it sit for a minute, give it one more stir, and pour it on those hot waffles.

Cornaby’s Jam in a Jiffy comes in regular and sugar free. I used the sugar free which has zero sugar or carbs! The original Jam in a jiffy has 4 grams of sugar and 5 grams of carbs if you’re wondering.

Refrigerate in an airtight container or freeze in batches and you can enjoy your fresh jam for weeks to come. I haven’t been able to stay out of mine so I’ve pretty much single-handedly finished off the whole batch myself throughout the Christmas week eating it on toast in the mornings, afternoons, or even for a bedtime snack.
