Stabilized Whipped Cream

Ingredients

  • 8 oz Whipping Cream
  • 2 Tbs. E-Z Gel
  • 1/2 C. Powdered Sugar
  • 2 Tbs. Vanilla

Start by whisking together the E-Z Gel and Powdered sugar in a small bowl. Then in a medium bowl, add the liquid ingredient and beat with a hand mixer. When the cream starts to stiffen, gradually add the dry ingredients while mixing and add more powdered sugar and vanilla to taste. Continue mixing until the whipped cream reaches your preferred thickness.

Pro Tip

If you want a lighter, fluffier whipped cream, you can use 50 percent whipping cream and 50 percent milk.

Yield: 8 prepared short cakes

Instructions

Bake homemade or store-bought biscuits according to the recipe or package directions, then let them cool slightly. Slice fresh strawberries and sweeten them if desired. Split each biscuit in half, spread Cornaby’s jam on the bottom half, then add sliced strawberries and a generous spoonful of stabilized whipped cream made with Cornaby’s E-Z Gel. Place the top half of the biscuit back on, then finish with more strawberries and whipped cream if desired. Serve right away or refrigerate briefly until ready to enjoy.
