Lemon Bars with EZ Gel

Lemon Bars are delicious cookie bars made by combining a delicate butter crust with a soft lemon custard. Easy enough for a novice baker, but looks difficult! EZ Gel helps to create a perfect soft custard that will last for days, if the cookies last that long!

Ingredients

 

  • For Crust-
  • 1 c. Butter (Softened, not melted)
  • dash salt
  • 1/2 c. Powdered Sugar
  • 2 c. Flour
  • For Filling-
  • 2 c. sugar
  • 2 Tbsp EZ Gel
  • 6 T. Lemon or Lime Juice
  • 4 eggs (Beaten)

Directions

Step 1
Preheat oven to 350 degrees. Combine Butter, Salt, powdered sugar and flour. Press into 9×13 baking pan. Bake for 15 minutes or until LIGHTLY browned.

Step 2
Combine sugar and EZ Gel in medium bowl. In separate bowl combine eggs and lemon juice, and beat well. Then pour wet ingredients into dry ingredients and stir until well combined.  

Step 3

Pour lemon mixture over slightly cooled crust and sprinkle with powdered sugar. Bake for an additional 25 minutes  

Step 4

Remove from oven and allow to cook. Sprinkle again with powdered sugar. Cool completely then cut into even sized bars.  

NOTE
Try using lime juice for a subtle and fun change!
