E-Z Gel has been around since the early 90s and joined the Cornaby’s family of products in 2007. It’s one of the world’s most versatile thickeners that can simply be whisked into any liquid. It’s particularly popular because it’s non-GMO, gluten-free, and great for canning. 

How to Use E-Z Gel®

What is E-Z Gel®?

E-Z Gel® is an instant thickener made from waxy maize (a gluten-free, non-GMO corn).  It can be added to any liquid, hot or cold, for instant thickening.  Products made with E-Z Gel® don’t separate or weep after storage in the refrigerator or freezer, so leftovers get eaten instead of thrown out.  It also increases moistures and extends the shelf life of baked goods, even cake, and brownie mixes. It is an all-around versatile product that improves the quality of instant, cooked, and baked products.

E-Z Gel® is different from other thickeners because it can be added directly to hot liquids without making a slurry or roux.  Simply sprinkle E-Z Gel® into the hot (not boiling) liquid and stir with a wire whisk for instant thickening.  If a soup or sauce is a little thin, just add another tablespoon or two of E-Z. If it is too thick add a little more liquid. E-Z Gel® is resistant to lumping and adds no color or flavor of its own. It doesn’t mask flavors and vegetables aren’t overcooked while waiting for the starch to thicken.

E-Z Gel® is a pastry cook’s dream. It can be used to stabilize whipping cream, tighten up a pudding or custard, and create fruit fillings that hold their shape without developing a hard set. A tablespoon or two in a cheesecake filling gives a smooth creamy consistency that is foolproof every time. Fillings can be made heat- stable by just adding a little E-Z Gel® to jams or jellies.  It is especially helpful for baking at high altitudes.

E-Z Gel® works great for home canning. Extensive testing has been conducted to ensure safe products when E-Z Gel is used according to recipes created by Cornaby’s, USDA Extension, and Ball recipes. The weight of the starch will be the same, but the volume will be different. 

 E-Z Gel® can also be used to assist patients who struggle with dysphasia (difficulty swallowing).  Caregivers simply whisk E-Z Gel® into the desired hot or cold liquid to thicken. Add 2-3 tablespoons per cup of liquid for a thin pudding-like consistency, 1½ -2 tablespoons per cup of liquid for a honey-like consistency, and 1-1 ½ tablespoons per cup of liquid for a syrup.
