Guacamole That Stays Green for Days

by | Sep 16, 2026

You know the sad sight. You make a big bowl of guacamole, cover it up, open the fridge the next day, and the top has gone brown. Lime juice helps. Plastic wrap pressed right onto the surface helps. But neither one stops it all the way, and by day two you are scraping off the brown before anyone will touch it.

I make a batch at least once a week, and we put it on everything. Eggs, tacos, sandwiches, chips, and sometimes just a spoon. So I needed guac that would keep. My secret is half a teaspoon of E-Z Gel stirred right in. It keeps the batch green and creamy for days, and it keeps it from going watery in the fridge too. Make it on Sunday, eat it all week. Let me show you how simple it is.

RECIPE

Guacamole That Stays Green

Greek Yogurt Cheesecake

Recipe

Ingredients

  • 2 ripe avocados
  • 1/3 cup sour cream
  • Juice of 1 large lime, fresh squeezed
  • A small drizzle of olive oil
  • 1 garlic clove, minced
  • Diced sweet onion, to taste
  • Diced tomatoes, to taste
  • Taco seasoning, salt, and pepper, to taste
  • 1/2 teaspoon E-Z Gel

Yield: About 2 cups. Servings: About 6 (a few tablespoons each).

Instructions

  1. Pick avocados that give a little when you press the skin, but are not so soft they have brown spots inside. Scoop them out and mash them to the texture you like.
  2. Stir in the sour cream, the fresh lime juice, and the small drizzle of olive oil. This gives the guac a creamy body that holds together and does not turn oily as it sits.
  3. Add the minced garlic, sweet onion, tomatoes, and taco seasoning with salt and pepper. Stir these in after the avocado base is mixed.
  4. Sprinkle in the half teaspoon of E-Z Gel and stir it through.
  5. Give it 3 to 5 minutes and it is ready. Cover and keep it in the fridge, and it will stay green and creamy for days.

Pro Tip: The lime juice and olive oil slow the browning on their own, but the E-Z Gel is what carries a big batch through the week. Stir it in evenly so the whole bowl gets the benefit, not just the top.

SERVING IDEAS

Why It Works

Guacamole browns because the avocado oxidizes when it hits the air. Lime juice, olive oil, and a layer of plastic wrap slow that down, but they do not stop it.

Gluten-free cheesecake crust

E-Z Gel is an instant thickener made from waxy corn, and it holds a mix together so it does not weep or thin out in the fridge. Stirred into the guac, it keeps the batch creamy and green instead of watery and brown. It is gluten-free, non-GMO, and it works cold with no cooking at all, which is why it has become a staple in my kitchen.

COMMON QUESTIONS

Frequently Asked Questions

How long will this guacamole stay green? With the E-Z Gel stirred in, a covered batch stays green and creamy for several days in the fridge. It holds far better than guac made with lime juice alone.

What does the E-Z Gel actually do here? It thickens and holds the mix together so it does not go watery, and it helps keep the batch from browning as it sits. It is an instant starch, so it works cold and sets in about 3 to 5 minutes.

Can I leave out the sour cream? You can, though the sour cream is what gives this version its creamy body. If you skip it, the guac will be a little looser, but the E-Z Gel will still help it hold.

Is E-Z Gel gluten-free? Yes. E-Z Gel is gluten-free and non-GMO. Check your taco seasoning label if you need the whole recipe to be gluten-free.

Why do you add the E-Z Gel last? You want the avocado base and the add-ins mixed first, then you sprinkle in the E-Z Gel and stir it through so it spreads evenly. Give it a few minutes to set.

Can I make it ahead for the week? That is the whole idea. Make it on Sunday, keep it covered in the fridge, and enjoy it for days.
