How to Make Stable Whipped Cream That Won’t Weep or Melt
Whipped cream is one of those simple kitchen staples that can make a dessert feel special, but regular whipped cream does not always hold up. It can weep, soften, or fall apart if it sits too long, especially outside the fridge.
In this video, we’ll show you how to use Cornaby’s EZ Gel to make stabilized whipped cream that stays light, fluffy, and beautiful longer. Then we’ll use it three ways: on Pioneer Short Cake with Cornaby’s jam and fresh strawberries, in a simple berries and cream dessert, and in a low-carb keto whipped cream version.
Watch the video below to see how easy it is to make whipped cream that actually holds up.

RECIPE 1
Stabilized Whipped Cream
Pioneer Strawberry Shortcake is simple, old-fashioned, and so good. Instead of using a sponge cake or store-bought dessert shell, this version starts with a tender homemade biscuit-style shortbread.
Once the shortbread is baked, we layer it with Cornaby’s jam, fresh strawberries, and a generous spoonful of stabilized whipped cream made with Cornaby’s E-Z Gel. The result is sweet, creamy, buttery, and full of real fruit flavor.
It is the kind of dessert that feels homemade in the best way. Perfect for summer berries, Sunday dinner, family gatherings, or anytime you want a simple dessert that tastes like it came from Grandma’s kitchen.
Stabilized Whipped Cream
Ingredients
- 8 oz Whipping Cream
- 2 Tbs. E-Z Gel
- 1/2 C. Powdered Sugar
- 2 Tbs. Vanilla
Yield: 2 c.
Servings: 8
Instructions
Start by whisking together the E-Z Gel and Powdered sugar in a small bowl. Then in a medium bowl, add the liquid ingredient and beat with a hand mixer. When the cream starts to stiffen, gradually add the dry ingredients while mixing and add more powdered sugar and vanilla to taste. Continue mixing until the whipped cream reaches your preferred thickness.
Pro Tip
If you want a lighter, fluffier whipped cream, you can use 50 percent whipping cream and 50 percent milk.
RECIPE 2
Pioneer Strawberry Shortcake
Pioneer Strawberry Shortcake is simple, old-fashioned, and so good. Instead of using a sponge cake or store-bought dessert shell, this version starts with a tender biscuit instead of a traditional cake.
Once the biscut is baked, we layer it with Cornaby’s gourmet strawberry jam, fresh strawberries, and a generous spoonful of stabilized whipped cream made with Cornaby’s E-Z Gel.
Pioneer Strawberry Shortcake
Ingredients
- 8 homemade or store-bought biscuts
- 8.75 oz jar Cornaby’s Strawberry Basket Jam
- 2 C. stabilized Whipped Cream
- 1 lb. strawberries
Yield: 8 prepared short cakes
Servings: 8
Instructions
Bake homemade or store-bought biscuits according to the recipe or package directions, then let them cool slightly. Slice fresh strawberries and sweeten them if desired. Split each biscuit in half, spread Cornaby’s jam on the bottom half, then add sliced strawberries and a generous spoonful of stabilized whipped cream made with Cornaby’s E-Z Gel. Place the top half of the biscuit back on, then finish with more strawberries and whipped cream if desired. Serve right away or refrigerate briefly until ready to enjoy.
Pro Tip
For added flavor, let the sliced strawberries sit with a little sugar for 10–15 minutes before assembling so they release their juices and create a simple syrup. Lightly sprinkle 1-2 Tbs. of E-Z Gel over the berries while mixing. Once its combined, let rest for 5 minutes to thicken completely. This creates a beautiful glaze on the berries that ads flavor.
RECIPE 3
Keto Stabilized Whipped Cream
This keto stabilized whipped cream has the same light, fluffy texture as classic whipped cream, but it is sweetened with allulose instead of powdered sugar. Cornaby’s E-Z Gel helps stabilize the cream so it holds its shape longer and does not weep or fall apart as quickly. It is perfect for berries, low-carb desserts, keto shortcake, pies, or any dessert where you want a whipped topping that stays beautiful.
Cornaby’s is proud to carry NutressaLife Allulose. It’s a blend of Allulose and Stevia Reb M that has the best taste. This non-caloric sweetener has a positive effect on your blood sugar and insulin and replaces table sugar one-for-one. NutressaLife is a sister company to Cornaby’s.
