Ingredients
- 3 3/4 cups strawberries stemmed and crushed
- 1/4 cup lemon juice bottled
- 2 cups sugar
- 1/2 cup E-Z Gel

Instructions
- Combine first three ingredients until sugar is dissolved. Gradually stir in E-Z Gel. Let stand 5 minutes to thicken. Package and freeze.
Recipe Notes
Use bottled lemon juice, not fresh. The reason for this is that bottled lemon juice has a consistent pH level and flavor. When you use fresh you get a brighter flavor, but the pH may not be low enough which leads to the jam fermenting or molding faster after it's been thawed.
