Combine sugar, cocoa, salt and E-Z Gel in a heavy, 3 quart pan. Add milk and butter and bring to heat. Stir well and cook over medium heat to a boil; continue boiling for 60 seconds. (Time it!) Let cool to lukewarm without stirring. You should be able to put your hand on the bottom of the pan comfortably. Add oats, almond butter and vanilla; stir until the mixture loses its gloss. Drop by teaspoons onto wax paper.
