Instructions
  1. Combine apricots and lime juice in heavy 6-8 quart pan. Stir in sugar and Thick Gel and bring to a boil, stirring constantly. Blend in remaining ingredients and boil for 1 minute. Fill jars, leaving 1/2" headspace. Adjust lids and process in water bath canner for 35 minutes (sea level).
Recipe Notes

Replacing some of the lime juice with pineapple juice or lemon juice will still keep the pH low enough for canning and adds some fun different flavors.

Citrus juices should not be fresh as the pH is inconsistent. Use bottled versions.
