The Viral Pickle Dip That Won’t Get Watery

by | Sep 2, 2026

If your feed looks anything like mine, you have seen pickle dip absolutely everywhere lately, and honestly, the hype is deserved. It is creamy, tangy, crunchy, and dangerously easy to eat by the bowlful. There is just one problem with most versions. By the time it reaches the party table, it has already started to separate into a watery puddle, because the pickles keep releasing their juice as it sits.

I fixed that. One tablespoon of E-Z Gel stirred in at the end, and the dip holds its thick, creamy texture for hours, all the way down to the bottom of the bowl. No more sad, weepy dip halfway through the party.

E-Z Gel is our instant thickener made from waxy corn. It is gluten free and non-GMO, and it thickens cold with no cooking at all. You stir it in gradually at the end, give it a few minutes to set, and you are done.

In the video I make the whole thing start to finish. Give it a watch, then scroll down for the full recipe, the best things to scoop it with, and the questions I get asked most.

The TikTok Viral Grillo’s Pickle Dip

Strawberry Salad Dressing

I was first introduced to this dip by my mother-in-law earlier this summer, and I instantly loved it. The only trouble was, at our picnic it separated and went watery before we could finish it. I knew right away I could fix that with E-Z Gel, and I have brought my upgraded version to every family gathering since.

Here is what makes it so good. It is creamy and tangy with crunch from the pickles, a little smoky bacon, sharp cheddar, and fresh green onion. The E-Z Gel is what sets it apart, keeping the dip thick and scoopable for hours instead of going watery the way most pickle dips do.

Viral Pickle Dip

Ingredients

  • 1 cup plain Greek yogurt
  • 1/2 cup mayonnaise
  • 2 Tbsp milk
  • 1 cup diced dill pickles, well drained
  • 1/4 cup chopped green onions
  • 1/4 cup bacon bits
  • 3/4 cup shredded cheddar cheese
  • 1 Tbsp Cornaby’s E-Z Gel

Yield: About 3 cups Servings: About 12

Instructions

In a bowl, combine the Greek yogurt, mayonnaise, and milk, and stir until smooth. Add the diced pickles, green onions, bacon bits, and cheddar, and stir it all together. Gradually stir in the E-Z Gel while you keep mixing, adding it slowly so it disperses evenly without clumping. Give it 3 to 5 minutes to fully set. It will hold its thick, creamy texture for hours, with no watery puddle and no separation, right down to the last chip.

Pro Tip

Drain your diced pickles really well before they go in, and add the E-Z Gel last and gradually. Those two steps are the whole secret to a dip that stays thick instead of turning into a puddle on the table.

SERVING IDEAS

WHAT TO DIP IN IT

My whole family loves this recipe, and everyone has found their own favorite pairing. I just open the pantry, pull out anything crunchy that could work as an edible spoon, and let everyone go to town. Tag us if you find your own favorite pairing!

Family Favorites

Ridged potato chips. The classic. A sturdy ruffled or kettle chip is strong enough to scoop a big, thick bite without snapping.

Pretzels. Pretzel crisps and rods add a salty crunch that plays perfectly against the tangy dip.

Buttery crackers. The rich, flakey and salty warmth of crackers is a perfect balance to the sour pickles.

Fresh vegetables. Celery sticks, carrots, and cucumber rounds keep it lighter and add their own crunch.

On a burger or sandwich. Do not stop at dipping. A spoonful on a burger or tucked into a sandwich is a seriously good idea.

COMMON QUESTIONS

Frequently Asked Questions

Why does pickle dip get watery, and how do you fix it?

Pickles keep releasing their juice as the dip sits, which thins it out into a puddle. Two things fix it: drain your diced pickles well before mixing, and stir in a tablespoon of E-Z Gel at the end. The E-Z Gel gives the dip enough body to hold its texture for hours without separating.

What is pickle dip made of?

This version starts with a creamy base of Greek yogurt, mayonnaise, and a splash of milk, then gets loaded with diced dill pickles, green onions, bacon bits, and shredded cheddar. The E-Z Gel at the end is what keeps it thick.

Can I make pickle dip ahead of time?

Yes, and it is a great make-ahead. Because the E-Z Gel keeps it from separating, it holds up covered in the fridge for several days, so you can make it the day before a party and it will still be thick and creamy.

What do you dip in pickle dip?

Sturdy ridged or kettle potato chips are the classic choice, along with pretzels and fresh vegetables like celery and carrots. It is also delicious spooned onto a burger or into a sandwich.

What is E-Z Gel?

E-Z Gel is our instant thickener made from waxy corn. It is gluten free and non-GMO, and it thickens cold with no cooking. Add it last and stir it in gradually, then give it 3 to 5 minutes to fully set.

Is this dip gluten free?

E-Z Gel itself is gluten free and non-GMO, so the dip can absolutely be made gluten free. Just check the labels on your bacon bits and any dippers you serve with it, since those can be a hidden source of gluten.

Can I use different pickles?

Yes. Classic refrigerators dill gives you that tangy, familiar flavor, but you can play with spicy or bread-and-butter pickles to change it up. Just be sure to drain whatever you use so the dip stays thick.

How long does pickle dip last in the fridge?

Kept covered in the refrigerator, it holds for several days without going watery, which is a big part of what makes this version different from most.
