One of my favorite things is to make simple breakfast burritos and use Cornaby's Raspberry Jalapeño Sauce instead of salsa. The flavor combination is great and it mixes well with a little bit of sour cream. Don't be afraid to add peppers and breakfast meats to the mix. If you are looking for a low-carb option then look for the low-carb tortillas in your grocery store. They taste great and give you a lot of extra fiber.
1/2 medium onion
1/2 green bell pepper
4 slices of cooked bacon, torn in small pieces
4 cooked sausage links, but in to small pieces
6 eggs lightly beaten
1/2 c. shredded cheddar cheese
Salt & pepper to taste
6 Flour tortillas
In medium pan fry the onions, peppers and breakfast meats until onions and peppers are tender. Mix in eggs and cook until no longer runny. Add salt and pepper to taste and mix in cheddar cheese. Wrap in warm tortillas and enjoy.
