Fresh Fruit Salad

Fresh Fruit SaladYield: 12 servings

1 16-oz. can fruit cocktail
1 17-oz. can pineapple chunks
1 T. orange juice concentrate
2 c. sliced or diced fresh fruit
(bananas, apples, strawberries, etc.)
1/2 t. vanilla
1/3 c. Ultra Gel®

Drain juice from fruit cocktail and pineapple (reserve fruits) and combine with orange juice concentrate, vanilla and cold water (if necessary) to make 1 1/4 c. Gradually add Ultra Gel® to liquid, stirring constantly with a whisk. Combine fresh fruit with reserved canned fruits and coat mixture with thickened dressing for desired consistency. Serve or refrigerate. Store any remaining dressing in refrigerator for up to one week.
